Falafel, is one of the popular and traditional dish in middle eastern cuisine. Dry chickpeas being the key ingredient, soaked and pulsed to a coarse or smooth paste with herbs, onions, spices and are deep-fried. Falafel is rich in protein, looks crispy from outside and green from inside. For a healthier option bake or air-fry. Serve with hummus or tahini sauce or wrap it in a pita bread and enjoy.



  • Chickpeas(dried) – 1 cup
  • Onion – 1 medium
  • Garlic – 4 cloves
  • Cumin powder – 1 tsp
  • Red chilli powder – 1 tsp
  • Parsley/ Cilantro – 1 cup
  • Flour – 1 tbsp
  • Lemon juice
  • Baking soda – 1/2 tsp
  • Salt to taste


Step 1: Soak dry chickpeas in water for 24 hrs and drain them. In a food processor, add soaked chickpeas, onion, garlic, cilantro, lemon juice and grind coarsely or (smooth paste).



Step 2: To the mix, add cumin, red chilli powder, salt, baking soda, flour and give a quick stir. Refrigerate the mix for an hour for firmness.



Step 3: Heat oil in a pan for deep-frying, scoop in the falafel mix to make a ball shape and gently drop in the oil. Fry until golden brown.




  1. You can use canned chickpeas.
  2. You can either grind chickpeas coarsely or to a smooth paste.
  3. You can add cilantro and parsley in equal halves.
