Fried rice is a popular food in Asia and differs from region to region with variations in ingredients and rice. Fried rice is quick and easy. The veggies, egg, meat, rice are stir-fried in a wok at a high flame.
- Chicken – 250 gms
- Onion – 2 tbsp
- Carrot – 1/4 cup
- Beans – 1/4 cup
- Peas – 1/4 cup
- Ginger – 1/2 tsp
- Garlic – 1 tsp
- Green onions – 2
- Egg – 1
- Basmati rice – 1 cup
- Cornflour – 1 tbsp
- Soy sauce – 2 tsp
- Pepper powder – 1 tsp
Step 1: Marinate chicken with corn flour, pepper, soy sauce, salt for 15 mins. Grease oil in a pan/ wok and sear the chicken until golden brown.
Step 2: Add oil in a pan/ wok in high flame, add finely chopped ginger, garlic, onion, green onion(bottom part) and saute for 30 sec. Now add all the veggies and saute for a minute or two.
Step 3: Set veggies aside in pan and add egg. Once the egg gets cooked add seared chicken, soy sauce, salt and give a quick stir. Add the boiled rice, pepper powder and green onions and mix gently.
- You can add veggies of your choice.
- Chop all the veggies finely.
- Keep all the ingredients ready, so nothing gets burnt in high flame.
- You can replace black pepper powder with white.
- Do not add hot rice to the mix.
