Have some ripe banana’s!!! Let’s toss it in pancake mix for a healthy breakfast. Serve with whipped cream and maple syrup.
- Wheat flour – 1 1/2 cup
- Banana – 1 big ripe
- Cinnamon powder – 1/2 tsp
- Brown sugar – 2-3 tbsp
- Milk – 1 1/2 cup
- Eggs – 1
- Baking powder – 2 tsp
- Salt – 1 tsp
- Vanilla extract – 1/2 tsp
- Whipped cream
- Maple syrup
Step 1: In a large bowl, add all the dry ingredients and whisk once.
Step 2: In a separate bowl, add milk, egg, vanilla extract, mashed banana and whisk until combined. Pour the wet mix into the dry mix and whisk gently.
Step 3: Heat pan/ griddle, pour 1 ladle(scoop) of the mix. Cook for a couple of minutes or until it bubbles up. Flip to the other side and cook until golden brown.
- Add milk, if batter is thick.
- You can substitute brown sugar with white sugar.
