Kadai mushroom is one of the North Indian delicacy prepared in a kadai in the ground paste of onions, tomatoes and whole spices. The stir fried onion and capsicum adds flavor and crunchiness to the curry. It is lip-smacking when served with roti/naan and basmati rice.




Onion – 1
Tomato – 1
Onion – 1/2 cubed
Capsicum – 1 cubed
Mushrooms – 1 cup
Garlic – 3 cloves
Ginger – 1/2 inch
Green chilli – 1
Turmeric powder – 1/4 tsp
Cumin powder – 1/2 tsp
Red chilli powder – 1 tsp
Coriander powder – 1.5 tsp
Kasuri methi
Salt to taste


Cloves – 4
Cardamom – 3
Cinnamon stick – 1
Cumin seeds – 1 tsp
Coriander seeds – 1 tsp
Bay leaf – 3
Dried red chillies – 2
Peppercorns – 1/2 tsp


Step 1: Dry roast all the ingredients mentioned under kadai masala in low flame until you get a good aroma and set aside.



Step 2: Heat butter in a pan. Add onions, capsicum and stir fry.



Step 3: Heat oil in the same pan. Add ginger, garlic, green chilli, onions and saute for 2 mins. Then add tomatoes, salt and saute roughly.



Step 3: Add the roasted spices, turmeric, cumin, coriander, red chilli powder and give it a quick stir. Add kasuri methi, cool the masala and grind to a smooth paste.




Step 4: Heat oil(or butter) in the pan. Add ground paste and saute for a minute, then add mushrooms, fried onion, capsicum and saute. Add water if required, cover the lid and cook for 5 mins.

  1. You can dry roast the ingredients mentioned under kadai masala, grind and store in an air-tight container.
  2. You may add fresh cream at the end.
  3. I stir fried onion and capsicum in butter to enhance the flavor, you can use oil instead.
